Paula Mercure, visionary founder of Bamboo Walk, a Black-owned Caribbean restaurant in Brooklyn, NY, was inspired during a 21-day spiritual fast in 2020. Guided by faith, she opened Bamboo Walk at 1343 Utica Avenue with a mission to serve exceptional food while celebrating culture, community, and God. Today, it’s known for fine dining, cabana seating, and as the first Caribbean drive-thru in the northeastern U.S.

Dexter Royes, Executive Chef at Bamboo Walk, is the creative force behind its bold, island-inspired cuisine. Internationally trained yet deeply rooted in Caribbean tradition, he brings decades of expertise to the kitchen. Partnering with founder Paula Mercure and matriarch Lorna Taylor, he’s crafted a menu that’s both nostalgic and inventive—featuring curry goat, oxtail stew, and Escovitch snapper—each dish plated with intention and designed to leave a lasting impression.
