Paula Mercure, visionary founder of Bamboo Walk, a Black-owned Caribbean restaurant in Brooklyn, NY, was inspired during a 21-day spiritual fast in 2020. Guided by faith, she opened Bamboo Walk at 1343 Utica Avenue with a mission to serve exceptional food while celebrating culture, community, and God. Today, it’s known for fine dining, cabana seating, and as the first Caribbean drive-thru in the northeastern U.S.

Paula’s journey is grounded in faith, family, and fearless leadership. Inspired by her love of food, sharp business instincts, and her mother Lorna’s culinary legacy, she built Bamboo Walk with intention and heart. The restaurant honors her Jamaican roots while uplifting Black immigrants and women of color. Supported by her husband Pierre Mercure and community investors, Paula proves that with vision, resilience, and divine guidance, bold dreams can become powerful realities.

Dexter Royes, Executive Chef at Bamboo Walk, is the creative force behind its bold, island-inspired cuisine. Internationally trained yet deeply rooted in Caribbean tradition, he brings decades of expertise to the kitchen. Partnering with founder Paula Mercure and matriarch Lorna Taylor, he’s crafted a menu that’s both nostalgic and inventive—featuring curry goat, oxtail stew, and Escovitch snapper—each dish plated with intention and designed to leave a lasting impression.

Chef Dexter’s philosophy is simple: spark creativity and inspire excellence in every bite. Leading with passion, he sets a standard of precision, elegance, and warmth that defines Bamboo Walk. His vision is to create an environment where team and guests alike experience the “wow” factor—through flavor, presentation, and atmosphere. Under his leadership, Bamboo Walk has become more than a restaurant; it is a destination where Caribbean heritage shines through culinary artistry.
